Zucchini Squares

Ingredients

  • 1 cup Bisquick
  • 1/2 cup chopped onion (or more, to taste)
  • 1/2 cup grated Parmesan cheese
  • 3 tablespoons chopped parsley
  • 1/2 teaspoon salt
  • Pepper, to taste
  • 1 clove garlic, finely chopped
  • 1/2 cup vegetable oil
  • 4 eggs (or egg substitute)
  • 3 cups thinly sliced zucchini

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) and grease a 13x9x2-inch baking pan.

  2. Mix Ingredients: In a large mixing bowl, combine the Bisquick, chopped onion, grated Parmesan cheese, chopped parsley, salt, pepper, and finely chopped garlic. Mix well.

  3. Add Eggs and Oil: Stir in the vegetable oil and eggs (or egg substitute) until well combined.

  4. Incorporate Zucchini: Gently fold in the thinly sliced zucchini last.

  5. Transfer to Pan: Pour the mixture into the prepared baking pan and spread it evenly.

  6. Bake: Bake in the oven for about 30 minutes, or until the top is golden brown.

  7. Cool and Cut: Allow the zucchini squares to cool slightly before cutting. For 12 squares, cut them into approximately 2×1-inch pieces. If you cut them smaller, they make great appetizers.
