White Chocolate Christmas Fudge

WHITE CHOCOLATE CHRISTMAS FUDGE

Ingredients:

  • 2 cups sugar
  • 3/4 cup sour cream
  • 1/2 cup PARKAY margarine
  • 12 oz. white chocolate, coarsely chopped
  • 1 (7 oz.) jar KRAFT marshmallow cream
  • 3/4 cup chopped dried apricots
  • 3/4 cup chopped walnuts

Instructions:

  1. Combine Ingredients: Combine the sugar, sour cream, and margarine in a heavy 2 1/2- to 3-quart saucepan.

  2. Boil the Mixture: Bring the mixture to a full rolling boil over medium heat, stirring constantly. Continue boiling for 7 minutes or until a candy thermometer reaches 234°F (soft ball stage), stirring constantly to prevent scorching.

  3. Add Chocolate: Remove the saucepan from the heat and stir in the coarsely chopped white chocolate until melted and smooth.

  4. Incorporate Remaining Ingredients: Add the marshmallow cream, chopped dried apricots, and chopped walnuts to the mixture. Beat until well blended.

  5. Pour into Pan: Pour the fudge mixture into a greased 8 or 9-inch square baking pan, spreading it evenly.

  6. Cool and Cut: Allow the fudge to cool at room temperature. Once cooled, cut into squares.

  7. Store: This recipe makes about 2 1/2 pounds of fudge. Store in an airtight container at room temperature.
