Valentine's Day Marshmallow Fudge

Here’s a fun and straightforward Valentine’s Day recipe that you can make with minimal effort:

Ingredients:

  • 1 cup milk
  • 2 squares unsweetened chocolate (or six tablespoons cocoa)
  • 2 tablespoons margarine
  • 2 1/2 cups sugar
  • 1/4 teaspoon salt
  • 2 tablespoons light corn syrup
  • 1 teaspoon vanilla extract
  • 12 marshmallows

Preparation Instructions:

  1. In a heavy saucepan, heat the milk, chocolate, and margarine together over low heat until the chocolate is melted.
  2. Add the sugar, salt, and corn syrup. Cook, stirring until it begins to boil.
  3. Cover the saucepan and boil for 3 minutes to wash down any sugar crystals from the sides of the pan.
  4. Uncover and continue cooking without stirring until a thermometer reads 232°F (110°C). Remove from the heat and allow to cool without stirring until it reaches a lukewarm temperature.
  5. Add the vanilla extract and beat the mixture until it thickens and loses its gloss.
  6. Cut each marshmallow into eight pieces and stir them into the fudge mixture.
  7. Pour the fudge into a greased pan and let it set.
  8. Once firm, cut into squares.
