Valentine's Day Marshmallow Fudge
Here’s a fun and straightforward Valentine’s Day recipe that you can make with minimal effort:
Ingredients:
- 1 cup milk
- 2 squares unsweetened chocolate (or six tablespoons cocoa)
- 2 tablespoons margarine
- 2 1/2 cups sugar
- 1/4 teaspoon salt
- 2 tablespoons light corn syrup
- 1 teaspoon vanilla extract
- 12 marshmallows
Preparation Instructions:
- In a heavy saucepan, heat the milk, chocolate, and margarine together over low heat until the chocolate is melted.
- Add the sugar, salt, and corn syrup. Cook, stirring until it begins to boil.
- Cover the saucepan and boil for 3 minutes to wash down any sugar crystals from the sides of the pan.
- Uncover and continue cooking without stirring until a thermometer reads 232°F (110°C). Remove from the heat and allow to cool without stirring until it reaches a lukewarm temperature.
- Add the vanilla extract and beat the mixture until it thickens and loses its gloss.
- Cut each marshmallow into eight pieces and stir them into the fudge mixture.
- Pour the fudge into a greased pan and let it set.
- Once firm, cut into squares.
