Girl Scout Mint Cookies

Girl Scout Mint Cookies

Here’s a version of the Girl Scout Mint Cookies recipe.

Ingredients

  • 1 box Devil’s Food Cake Mix
  • 2 eggs
  • 2 tablespoons water
  • 2 tablespoons cooking oil
  • 1/2 cup cocoa powder
  • 1 package of chocolate chips
  • 2-3 drops Wilton’s Candy Mint Flavoring (or to taste)

Instructions

  1. Preheat the Oven:

    • Preheat your oven to 400°F (200°C).
  2. Prepare the Cookie Dough:

    • In a large mixing bowl, combine the Devil’s Food Cake Mix, eggs, water, cooking oil, and cocoa powder.
    • Mix well until all ingredients are thoroughly combined. The dough will be very sticky.
    • Let the mixture stand for 20 minutes.
  3. Shape the Cookies:

    • After resting, shape the dough into tiny balls, about 1/2 inch in diameter.
    • Place the balls on a cookie sheet, spacing them about 2 inches apart.
    • Use a large spoon with cooking spray (like Pam) to flatten each ball into a cookie shape.
  4. Bake:

    • Bake in the preheated oven for about 8 minutes, or until the cookies are set.
    • Allow the cookies to cool on the baking sheet until they reach room temperature.
  5. Prepare the Chocolate Coating:

    • In a microwave-safe bowl or double boiler, heat the chocolate chips until completely melted.
    • Once melted, add a couple of drops of the mint flavoring. Be careful not to add too much, as it has a potent flavor.
  6. Coat the Cookies:

    • You can either spread the melted chocolate on top of the cookies or dip the cookies into the chocolate to coat them.
  7. Let Set:

    • Allow the chocolate to set before serving.
