EASY CHRISTMAS DIVINITY

Ingredients:

  • 3 cups sugar
  • 3/4 cup light corn syrup
  • 3/4 cup water
  • 2 egg whites
  • 1 (3 oz.) package strawberry or lime flavored gelatin
  • 1 cup chopped nuts (optional)
  • 1/2 cup shredded coconut (optional)

Instructions:

  1. Prepare the Syrup: Combine the sugar, light corn syrup, and water in a saucepan. Bring the mixture to a boil over medium heat.

  2. Cook to Hard Boil Stage: Reduce the heat and continue cooking until the mixture reaches the hard boil stage (approximately 250°F on a candy thermometer).

  3. Beat Egg Whites: Beat the egg whites in a mixing bowl while cooking the syrup until fluffy.

  4. Add Gelatin: Gradually add the dry gelatin to the beaten egg whites, and beat until stiff peaks form.

  5. Combine Syrup and Egg Whites: Once the syrup reaches the hard boil stage, slowly pour it into the egg white mixture while beating constantly. Continue to beat until the candy holds its shape and loses its gloss.

  6. Add Nuts and Coconut: Stir in the chopped nuts and shredded coconut (if using) until evenly distributed.

  7. Pour into Pan: Quickly pour the mixture into a buttered 9-inch pan, spreading it evenly.

  8. Let Stand: Allow the candy to stand at room temperature until firm.

  9. Cut the Candy: To cut the candy, dip a knife blade into hot water to make slicing easier. Cut into desired shapes or squares.

  10. Store: Store the candy in an airtight container at room temperature.
