Crab Gumbo

A flavorful crab gumbo.
Ingredients
- 2 onions, chopped
- 4 tomatoes, chopped
- 7 cups of water
- 10 okra, sliced
- 2 bay leaves
- 3 sprigs of parsley
- 1 1/2 teaspoons salt
- 1/2 teaspoon thyme
- 1/4 teaspoon chili peppers (or to taste)
- 4 tablespoons butter
- 1 lb. lump crabmeat
Instructions

Prepare the Base:
- In a large pot, combine the chopped onions, tomatoes, sliced okra, water, bay leaves, parsley, salt, thyme, and chili peppers.

Cook the Base:
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes. This allows the flavors to meld together.

Cook the Crabmeat:
- In a separate pan, melt the butter over medium heat.
- Add the lump crabmeat and cook for about 20 minutes, stirring gently to avoid breaking up the crabmeat too much.

Combine and Simmer:
- After the base has cooked for 30 minutes, add the crabmeat and butter mixture to the pot.
- Stir gently to combine and cook over low heat for 30 minutes, allowing the flavors to blend.

Serve:
- Remove the bay leaves and parsley sprigs before serving.
- Enjoy the soup hot, possibly with crusty bread or over rice.
