Crab Gumbo

A flavorful crab gumbo.

Ingredients

  • 2 onions, chopped
  • 4 tomatoes, chopped
  • 7 cups of water
  • 10 okra, sliced
  • 2 bay leaves
  • 3 sprigs of parsley
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon thyme
  • 1/4 teaspoon chili peppers (or to taste)
  • 4 tablespoons butter
  • 1 lb. lump crabmeat

Instructions

  1. Prepare the Base:

    • In a large pot, combine the chopped onions, tomatoes, sliced okra, water, bay leaves, parsley, salt, thyme, and chili peppers.
  2. Cook the Base:

    • Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes. This allows the flavors to meld together.
  3. Cook the Crabmeat:

    • In a separate pan, melt the butter over medium heat.
    • Add the lump crabmeat and cook for about 20 minutes, stirring gently to avoid breaking up the crabmeat too much.
  4. Combine and Simmer:

    • After the base has cooked for 30 minutes, add the crabmeat and butter mixture to the pot.
    • Stir gently to combine and cook over low heat for 30 minutes, allowing the flavors to blend.
  5. Serve:

    • Remove the bay leaves and parsley sprigs before serving.
    • Enjoy the soup hot, possibly with crusty bread or over rice.
