CHRISTMAS GLOW DIVINITY

Ingredients:

  • 3 cups sugar
  • 3/4 cup white corn syrup
  • Pinch of salt
  • 3/4 cup water
  • 2 egg whites
  • 1 small package of strawberry Jello (3 oz)
  • 1 cup nuts (chopped, your choice)

Instructions:

  1. Mix Ingredients: Combine the sugar, white corn syrup, and water in a saucepan. Stir until the sugar is dissolved.

  2. Boil: Cover the pan and bring the mixture to a boil. Keep it covered for the first 3 minutes. After that, remove the lid and continue boiling until the mixture reaches 250°F (firm ball stage) on a candy thermometer.

  3. Prepare Egg Whites: While boiling the sugar mixture, beat the egg whites in a mixing bowl until they are foamy.

  4. Add Gelatin: Gradually add the strawberry Jello to the beaten egg whites while continuing to beat until the mixture is stiff.

  5. Combine Mixtures: Once the sugar mixture reaches the correct temperature, carefully pour it over the beaten egg white mixture gradually while continuing to beat. Keep beating until the mixture is firm enough to drop from a teaspoon.

  6. Add Nuts: Gently fold in the chopped nuts.

  7. Drop onto Wax Paper: Using a teaspoon, drop spoonfuls of the mixture onto wax paper to cool and set.

  8. Storage: Store the divinity in a covered can or dish once set. It can keep indefinitely.
