Ingredients:

  • 3 packages of cream cheese, softened
  • 3/4 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 2 cups semi-sweet chocolate chips, divided
  • 1 extra serving-size packaged cracker crumb crust
  • 2 tablespoons whipping cream

Preparation Instructions:

  1. Preheat the oven to 280°C (approximately 536°F).
  2. In a large bowl, beat the cream cheese and sugar together until smooth.
  3. Add the eggs and vanilla extract, and beat well. Stir in 1 2/3 cups of the chocolate chips, then pour the mixture into the crust.
  4. Bake for 10 minutes. Without opening the oven door, reduce the temperature to 180°C (approximately 356°F) and continue baking for 30 minutes or until just set. Remove from the oven and let cool completely on a wire rack.
  5. Cover and refrigerate until thoroughly chilled.
  6. Combine the remaining 1/3 cup of chocolate chips and whipping cream in a small microwave-safe bowl. Microwave on high for 20 to 30 seconds, or until the chips are melted and the mixture is smooth when stirred.
  7. Cool the chocolate mixture slightly, then spread it over the top of the cheesecake.
  8. Refrigerate for 15 minutes or until the topping is set.
  9. Cover and refrigerate any leftover cheesecake.
