Chocolate Valentine Cheese Pie

Ingredients:
- 3 packages of cream cheese, softened
- 3/4 cup sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 2 cups semi-sweet chocolate chips, divided
- 1 extra serving-size packaged cracker crumb crust
- 2 tablespoons whipping cream
Preparation Instructions:
- Preheat the oven to 280°C (approximately 536°F).
- In a large bowl, beat the cream cheese and sugar together until smooth.
- Add the eggs and vanilla extract, and beat well. Stir in 1 2/3 cups of the chocolate chips, then pour the mixture into the crust.
- Bake for 10 minutes. Without opening the oven door, reduce the temperature to 180°C (approximately 356°F) and continue baking for 30 minutes or until just set. Remove from the oven and let cool completely on a wire rack.
- Cover and refrigerate until thoroughly chilled.
- Combine the remaining 1/3 cup of chocolate chips and whipping cream in a small microwave-safe bowl. Microwave on high for 20 to 30 seconds, or until the chips are melted and the mixture is smooth when stirred.
- Cool the chocolate mixture slightly, then spread it over the top of the cheesecake.
- Refrigerate for 15 minutes or until the topping is set.
- Cover and refrigerate any leftover cheesecake.
