  • 4 ounces bittersweet chocolate, finely chopped
  • 1/2 cup cocoa powder (for rolling)

Instructions

  1. Heat the Cream:

    • In a small saucepan, heat the heavy cream over medium heat until it is almost boiling. Do not let it boil.
  2. Make the Ganache:

    • Place the finely chopped bittersweet chocolate in a medium bowl.
    • Pour the hot cream over the chocolate and let it sit for a minute to soften it.
    • Whisk gently until the chocolate is completely melted and the mixture is smooth. At this point, you have a simple ganache.
  3. Cool the Ganache:

    • Allow the ganache to cool at room temperature until it hardens enough to be manipulated. This may take a couple of hours.
  4. Form the Truffles:

    • Once the ganache is solid, use a small scoop to scoop portions and roll them into 1-inch balls.
  5. Roll in Cocoa:

    • Roll each truffle in cocoa powder until fully coated.

  • This recipe makes about 24 truffles or approximately 2/3 cup of ganache.
