Berries and Hearts Salad

Here’s a fun and straightforward Valentine’s Day recipe that you can make with minimal effort:

Ingredients

Dressing:

  • 1 tablespoon finely chopped shallots
  • 1/4 teaspoon fresh chopped ginger
  • 1/4 teaspoon salt
  • 1/2 teaspoon sugar
  • 1 tablespoon burgundy wine
  • 2 tablespoons raspberry vinegar
  • 4 tablespoons olive oil
  • 1/4 cup sundried cranberries
  • Freshly ground black pepper to taste

Salad:

  • 1 heart of Romaine lettuce
  • 1 heart of Bibb lettuce
  • 1/2 head radicchio
  • 3 artichoke hearts, quartered
  • 8 thin slices of heart of palm (about 1/4 inch)
  • 1/4 cup raspberries
  • 4 strawberries, sliced lengthwise into heart shapes
  • 1 tablespoon chopped walnuts

Preparation Instructions

To Prepare the Dressing:

  1. Mix the shallots, ginger, salt, sugar, burgundy wine, raspberry vinegar, and sundried cranberries in a bowl.
  2. Let the mixture stand in the refrigerator for at least one hour to allow the flavors to meld.
  3. Gradually add the olive oil while whisking together until well combined.

To Prepare the Salad:

  1. Break up the Romaine and Bibb lettuce into bite-sized pieces and place them in a large bowl. Cut the radicchio into bite-sized pieces and toss it with the lettuce.
  2. In a separate bowl, combine the artichoke hearts, hearts of palm, raspberries, strawberries, and chopped walnuts.
  3. Drizzle the dressing over the salad mixture and toss gently to combine.

Serve:

  • Serve immediately by placing the lettuce mix on a plate and spooning the salad mixture over it. Enjoy your fresh and colorful salad!
