Here’s a version of the “Yams for Health” recipe.

Ingredients

  • 4 medium yams, peeled and sliced
  • 1/2 teaspoon finely shredded orange peel
  • 1/2 cup orange juice
  • 1 tablespoon brown sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/8 teaspoon allspice

Instructions

  1. Cook the Yams:

    • In a large skillet, bring 1 inch of water to a boil.
    • Add the sliced yams to the skillet, cover, and simmer for about 20 minutes, or until tender.
    • Once cooked, drain the yams.
  2. Prepare the Sauce:

    • Mix the finely shredded orange peel, orange juice, brown sugar, salt, cinnamon, and allspice in a small bowl.
  3. Combine and Glaze:

    • Pour the orange juice mixture over the drained yams in the skillet.
    • Cook and stir until the mixture is bubbly.
    • Simmer uncovered for about 5 minutes, occasionally spooning the sauce over the yams to create a glaze.

Serve

  • Serve warm as a delicious and healthy side dish.
