KFC Original Fried Chicken

Here’s a version of the Original Fried Chicken recipe.
Ingredients
- 2-3 pounds cut-up chicken pieces
- 1 quart of water
- 3 tablespoons salt (for soaking)
- 1 cup milk
- 1 egg, beaten
- 2 cups flour
- 1 teaspoon Accent (MSG)
- 1 tablespoon salt
- 1 teaspoon black pepper
- Soybean oil (for frying; no substitutions)

Soak the Chicken:
- In a large bowl, combine the quart of water with three tablespoons of salt.
- Add the cut-up chicken pieces and allow them to soak for 30 minutes.

Prepare the Coating:
- In a separate bowl, mix the beaten egg and milk together.
- In another bowl, combine the flour, Accent (MSG), one tablespoon of salt, and black pepper.

Preheat the Oil:
- Preheat your deep fryer to 350°F (175°C), or if using a skillet, add about 3/4 inch of soybean oil and set it on medium heat.

Dredge the Chicken:
- After soaking, remove the chicken from the salted water and dry it thoroughly with paper towels.
- Dredge each piece of chicken in the flour mixture, dip it into the milk and egg mixture, and then return it to the flour mixture. Ensure each piece is fully coated at each step.

Fry the Chicken:
- If using a deep fryer, fry a few pieces at a time for about 20 minutes, covered, turning occasionally.
- If pan frying, cook the chicken covered, turning occasionally, for about 30 minutes. Always check the most significant piece for doneness to ensure it is fully cooked.

Drain and Serve:
- Once cooked, allow the fried chicken to drain on paper towels to remove excess oil.
