- 5 tablespoons butter, melted
- 1 cup plus one tablespoon sugar
- 3 (8 oz.) packages cream cheese, softened
- 1 teaspoon vanilla extract
- 1/2 cup fresh lime juice (about five limes; if using key limes or key lime juice, use half as much)
- 3 eggs
- Whipped cream (for serving)
Instructions
-
Preheat the Oven:
- Preheat your oven to 350°F (175°C).
-
Prepare the Crust:
- In a bowl, combine the graham cracker crumbs, melted butter, and one tablespoon of sugar. Stir well to coat all the crumbs, keeping the mixture crumbly.
- Press the crumb mixture onto the bottom and halfway up the sides of an 8-inch springform pan.
- Bake the crust in the oven for 5 minutes, then set aside to cool.
-
Make the Filling:
- In a large mixing bowl, combine the softened cream cheese, 1 cup of sugar, and vanilla extract. Mix with an electric mixer until smooth.
- Add the fresh lime juice and eggs, and continue to beat until the mixture is smooth and creamy.
-
Combine and Bake:
- Pour the cheesecake filling into the prepared crust.
- Bake in the oven for 60 to 70 minutes. The cheesecake is done when the top is turning light brown.
-
Cool and Chill:
- Remove the cheesecake from the oven and allow it to cool to room temperature.
- Once cooled, place the cheesecake in the refrigerator to chill.
-
Serve:
- When chilled, carefully remove the sides of the springform pan and cut the cheesecake into slices.
