Christmas Fruitcake Cookies

CHRISTMAS FRUITCAKE COOKIES

Ingredients:

  • 1 cup butter, softened
  • 1 1/2 cups sugar
  • 2 eggs
  • 2 1/2 cups flour
  • 1/2 teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 2 (8 oz.) packages pitted dates, chopped
  • 3 cups pecans, chopped
  • 1 (8 oz.) package candied pineapple, chopped
  • 1 (8 oz.) package candied cherries, quartered

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).

  2. Cream Butter and Sugar: In a large mixing bowl, cream the softened butter and sugar until light and fluffy.

  3. Add Eggs: Beat the eggs one at a time, mixing well after each addition.

  4. Combine Dry Ingredients: In a separate bowl, whisk together the flour, salt, baking soda, and cinnamon. Gradually add the dry ingredients to the butter mixture, mixing until well combined.

  5. Add Fruits and Nuts: Fold in the chopped dates, pecans, candied pineapple, and candied cherries until evenly distributed throughout the dough.

  6. Drop Cookies: Using a spoon or cookie scoop, drop rounded tablespoons of dough onto a lightly greased cookie sheet, leaving space between each cookie.

  7. Bake: Bake in the preheated oven for about 13 minutes, or until the edges are lightly golden.

  8. Cool: Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
