Christmas Cheese Log

CHRISTMAS CHEESE LOGS

Ingredients:

  • 2 large packages Philadelphia cream cheese, softened
  • 1 container Wispride sharp cheese, softened
  • 1/2 to 1 cup minced parsley (adjust to taste)
  • 1 scant teaspoon Tabasco sauce (adjust to taste)
  • 1 cup chopped pecans
  • 2 tablespoons finely chopped onion (adjust to taste)

Instructions:

  1. Please prepare the Cheese: Ensure that the Philadelphia cream cheese and the Wispride sharp cheese are at room temperature for easier mixing.

  2. Mix the Cheese: In a large mixing bowl, cream the softened cream cheese and Wispride sharp cheese until smooth and well combined.

  3. Add Ingredients: Stir in the Tabasco sauce, finely chopped onion, half of the chopped pecans, and 1/4 cup of minced parsley. Mix until everything is evenly incorporated.

  4. Chill: Cover the mixture and chill in the refrigerator until firm, about 1-2 hours.

  5. Shape the Logs: Once the mixture is firm, divide it into three portions and shape each into a log.

  6. Roll in Nuts and Parsley: Roll each log in the remaining chopped pecans and minced parsley until well coated.

  7. Wrap and Store: To keep logs fresh, wrap each log in Saran Wrap and then put it in foil.

  8. Garnish and Serve: When ready to serve, garnish with holly (if desired) and slice into rounds. Serve with your choice of crackers.
