CHRISTMAS PECAN BALLS

Ingredients:

  • 1/2 lb. margarine (1 cup), softened
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups flour
  • 1 1/2 cups chopped pecans
  • 1/2 cup confectioners’ sugar (for rolling)

Instructions:

  1. Prepare the Dough: In a large mixing bowl, combine the softened margarine, vanilla extract, and salt. Mix until well combined.

  2. Add Dry Ingredients: Gradually add the flour and chopped pecans to the mixture, stirring until everything is evenly incorporated.

  3. Chill the Dough: Cover the bowl with plastic wrap and chill the dough in the refrigerator for at least 1 hour or more.

  4. Shape the Cookies: Preheat your oven to 350°F (175°C). Once chilled, roll the dough into balls about the size of quarters and place them on a cookie sheet.

  5. Bake: Bake in the oven for about 15 minutes, or until the bottoms are lightly golden.

  6. Roll in Sugar: While the cookies are still warm, roll them in confectioners’ sugar. Allow them to cool slightly, then roll them in sugar again for an extra sweet coating.

  7. Cool Completely: Let the cookies cool completely on a wire rack.
